A little something home-made makes a great hostess gift or a special treat to have on hand for the holidays.
2 cups almonds or other unsalted nuts
1/4 cup granulated sugar
1/2 teaspoon cayenne
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 egg white
In a large bowl, beat egg white with a whisk or fork until foamy. Stir in nuts and stir until coated in egg white. In a small bowl, mix sugar and spices together. Add sugar mixture to nuts and egg white and toss until well coated. Spread on a lightly greased baking sheet (or use cooking spray) Separate nuts, using a fork. Bake in oven at 325 degrees F (160C), stirring often, until nuts are a golden colour (20 - 25 minutes). Cool completely and store in an airtight container in a cool place. Will keep for 2 weeks.
